Kale Chips

Ingredients

10 oz. prewashed Kale

1/2 c. almond flour

1 Tbsp. Nutritional Yeast

1/2 tsp. Garlic Salt

1 Tbsp. EV Olive Oil

In conventional oven, preheat to 325℉ and bake for about 20 minutes, in air fryer you can also achieve a great crunch but only if you have a rotating barrel and it won't hold the toppings.

Boricua Chicken Stew

(Sancocho) Ingredients

2 pounds of trimmed chicken thighs (can sub 2 cups of pigeon peas)

1/2 c. of Sofrito (puree of cilantro onion and red sweet peppers)

1 diced medium onion

6 cloves of crushed garlic

2 quarts of Chicken or Vegetable broth

1 1/2 cups of shredded green cabbage

2 Carrots

1 pound of Malanga (Cocoyam)

1 pound of Pumpkin or chayote squash

1 pound of Cassava root

1-2 Green plantains

Dressed up Brocolli

Ingredients

1 head of Broccoli

1/4 c. sliced Blanched Almonds

2-3 minced Garlic Cloves

pinch of Thyme

pinch of Himalayan Salt

2 Tbs. Veggie Broth

1 Tbs. Olive oil or butter

Heat the pan, add all the ingredients and cover to let steam for about 3 minutes, then stir, test for desired doneness and adjust to taste.

Tip for delish veggies

Give your veggies some love! If all you put on them is salt and butter, of course you are bored, baby! Use some veggie broth and season it up, emulsify with lemon juice if you like, experiment.
